  1. Boil the tomatoes in a little water till they are quite soft, strain through a sieve. Collect the puree and weigh, to each pound allow 3/4 lb sugar, 1 teaspoonful ginger essence and the juice of two lemons. Put all the ingredients into a pan, boil slowly, and stir until the mixture becomes quite thick. Put into warm jars and cover at once.
