  1. 4 lbs yellow tomatoes
  2. 2 lemons
  3. 3 lbs sugar
  4. 4 pieces green ginger root
  5. 1/4 pint water
  1. Wash and drain tomatoes and place in pan in layers with sugar, sliced lemons (seeds removed), and cleaned and sliced ginger roots; add water and let stand one hour. Then boil until thick, about an hour. Pour into hot, sterilized glasses (or jars), cover with melted paraffin when cold, and seal, (or cover jars).
