  1. 3 lbs tomatoes
  2. 1/4 oz ground ginger
  3. allspice
  4. 3 small onions
  5. 1 gill vinegar
  6. salt
  1. Cut tomatoes in halves or quarters, and lay on a dish with a sprinkling of salt. Let stand 24 hours. Turn into pan and simmer till soft. Strain through a sieve, and to the liquid add the vinegar, ginger, spice and chopped onions. Pour all into pan and boil till fairly thick. Allow to cool, then strain through a colander into bottles, which must be tightly corked at once.
