Ingredients
  1. 30 Tangerines
  2. 6 lbs Sugar
  3. 3 Lemons
Instructions
  1. Cut the tangerines in halves, remove pips and pith, and place them in a bowl with 1 pint boiling water. Leave to soak till next day.
  2. Slice the peel thinly and place in pan. Add the juice and peel of lemons. Cover with 5 pints of cold water and leave till next day.
  3. Strain the juice from the soaked pips and pith, and add it to the pan containing the sliced peel, water and lemons. Pour all this into preserving pan and boil for 1 hour. Take out the lemon peel, add the sugar gradually, stir till dissolved, boil for about 1 hour more. Test and when sets, put into warm jars and cover at once.
