  1. 2 lbs tangerines
  2. 3 pints water
  3. juice of 2 lemons
  4. 3 lbs sugar
  1. Grate the rinds lightly and put tangerines into pan with the water, and boil gently until they are tender. Drain, cut into quarters and scrape out pulp. Mince the pith and rub through a sieve with the pulp. Boil the pips in half pint water till reduced to 1/4 pint. Strain the water into water the tangerines were boiled in, adding also the sieved pulp and pith, grated rinds, sugar and lemon juice. Cook the mixture slowly until the sugar is dissolved, then bring it to the boil and boil till it will jelly when cold. Makes about 4 lbs,
