  1. large firm strawberries
  2. 12 oz castor sugar to lb of fruit
  1. Make a syrup by boiling sugar with water, allowing 1 gill water to each pound of sugar; after boiling a few minutes add the fruit carefully. Boil slowly for 15 minutes, then take out the fruit, drain it and pack in layers in jars, taking care to keep it whole. Continue to boil syrup till thick. Pour it boiling over fruit. Cover while hot.
