  1. 4 lbs stoned cherries
  2. 4 lbs sugar
  3. 1 1/2 pints vinegar
  4. 1 oz stick cinnamon
  5. 1/2 oz cloves
  1. Tie cinnamon and cloves in muslin bags. Add them to the vinegar and boil for 15 minutes. Then add sugar and boil for 10 minutes longer, skimming well. Add to this the cherries and let this boil down for 30 minutes. Remove cherries with a skimmer and boil down the syrup until quite thick, skimming constantly. Add cherries and re-heat to boiling point. Fill hot, sterilised jars, and seal.
