  1. 10 lbs rhubarb
  2. 2 gallons water
  3. sugar
  4. 1/4 oz Isinglass (a kind of gelatin obtained from fish, especially sturgeon, and used in making jellies, glue, etc., and for clarifying ale.
  5. 1/2 oz root ginger
  6. 1 lemon
  7. 1 orange
  1. Clean rhubarb and cut up small. Put in large bowl, add water and leave 4 days covered. Strain, measure the liquid, and to every gallon allow 4 lbs sugar. Stir the liquid and sugar together and stand for 3 days, stirring frequently. Pour into a large cask which can be made airtight, add the isinglass, previously dissolved, the rinds of the lemons, and orange and the ginger. Cork up and leave till it ceases to bubble. Remove rinds and ginger, pour into bottles, and leave for 6 months.
