  1. 3 lbs prunes
  2. 2 lemons
  3. 2 lbs sugar
  1. Wash and soak prunes for 6 hours, then stir slowly till tender. Remove stones, cut the pulp into small pieces and slice lemons very thinly, removing pips and hard pith in the centre. Add the sliced lemons to the prunes. Put all into a pan, add the sugar (warmed), stir till dissolved, and continue to boil until the syrup thickens when tested. Pour into warm jars, and cover when cold.
