  1. 40 firm white peaches
  2. 2 lbs brown sugar
  3. 1 pint vinegar
  4. 1 oz stick cinnamon
  5. 1 oz whole allspice
  6. whole cloves
  1. Dip peaches in boiling water and wipe off fuzz with a towel. Boil sugar, vinegar, cinnamon and allspice for 15 minutes. Stick 3 cloves in each peach, put in boiling syrup, and boil till tender. Pack into hot, sterilised jars, pour boiling syrup and seal.
