  1. 1 lb dried peaches
  2. 2 lbs sugar
  1. Wash the fruit, and cut very small, and soak for 24 hours in enough water to cover them; then cook slowly until the fruit is tender. Press it though a sieve. Pour the puree into a pan, add the sugar, and stir till it has dissolved; continue cooking slowly till the mixture becomes very thick. Stir frequently.
