  1. Boil grapefruit in sufficient water to cover till tender, and leave in water till the next day. Cut orange and lemon in halves and collect the juice, and add it the the rinds and pulp cut very thin. Discard the pips and pith. Take the grapefruit from the water, cut it in two, squeeze out the juice and add it to the sliced lemon and orange. Slice the grapefruit rind very thinly, add it to the rest, and turn all into a pan with 1 pint of the grapefruit water. Boil for about 1 hour, measure the fruit and juice, and to each pint allow 1 lb sugar. Boil all together gently until it sets when tested.
