  1. 1 lb dried figs
  2. Rind and juice of 1 lemon
  3. 2 oz preserved ginger
  4. 1/2 lb sugar
  1. Wash figs and slice thinly, soak for 24 hours in enough water to cover. Put the fruit and water in a pan and simmer till tender. Add the sugar, heated, and stir till dissolved. Add the lemon juice, grated rind and ginger chopped small. Continue to simmer gently till mixture thickens. Pour into warm jars and cover.
