Ingredients
  1. Elderberries
  2. Water
  3. Sugar
  4. Cloves
  5. Ginger Essence
  6. Brandy
  7. Yeast
Instructions
  1. To each quart of berries add 2 quarts water, boil for 1/2 hour, strain and to each quart juice allow 3/4 lb sugar. Boil for 20 minutes with a few cloves and a little ginger essence. When cool, pour into a wooden tub with yeast enough to work. When it ceases to hiss, skim it, remove the yeast; add 1/4 pint brandy to each gallon of wine and bottle it.
