  1. Wash and dry the fruit. Remove the rind thinly from four of the oranges. Cut into fine shreds. Cut all the oranges in two. Remove the pips. Place in a basin with a pint of water. Remove the juice from the fruit. Put into a large basin. Pass remaining oranges through a slicer. Add this pulp to the juice. For every bitter orange add one pint water. For each sweet orange and lemon add 1/2 pint of water. Allow to stand overnight. Put into pan, and add the strained liquid from the pips. Simmer slowly till tender. Strain through in jelly bag. Measure the liquid. To every pint add 1 lb sugar. Add the shreds of orange. Bring slowly to boiling point. Boil for about 30 minutes till set. Pour into warm jars.
