- 1 1/2 lbs cherries (when stoned)
- 2 oz shelled walnuts
- 1 orange
- 4 oz stoned raisins
- 1/2 lemon
- 1 1/2 lb sugar
- Stalk, stone, and weigh cherries, put into pan with the sugar, sprinkling it over in layers. Squeeze out the juice from the orange and lemon and make up to 1 1/2 gills with water. Add this to the cherries, cook slowly at first until the sugar is dissolved. Then bring it to the boil and remove the scum. Cut up the raisins and chop the walnuts and add, and boil all together until it will set when tested.
