  1. 4 cups chopped beets
  2. 1 cup chopped onion
  3. 2 cups chopped cabbage
  4. 1/2 cup sugar
  5. 2 cups vinegar
  6. 2 tablespoons salt
  7. 1 1/2 tablespoons mustard
  1. Put beets in boiling water and cook until stems loosen, remove skins and put each vegetable through chopper, then measure. Place chopped ingredients in saucepan, add sugar, seasoning and vinegar and boil until vegetables are tender. Put into hot, sterilized jars and seal.
