  1. Peel the fruit, cut it in slices and weigh, and to each pound allow 1 lb sugar and 1 lemon. Put the fruit in a large bowl, cover with sugar, sprinkle over it the lemon juice, and leave to stand for a few hours. Then pour all into a pan and bring to the boil. Stir frequently, and as soon as it thickens, test. When it acts quickly and becomes firm, press it into jars.
  2. Either can your usual way or refrigerate.
