  3. 1/2 oz butter to 1 lb fruit
  4. 1 lemon to 1 lb fruit
  1. Peel, core, and slice apples, weigh and allow 1 lb sugar to 1 lb fruit. Put fruit in a double saucepan with the butter, and 1/4 lb of sugar to each pound of fruit and cover, fill lower part of saucepan with water and boil till fruit is tender. Pass through a sieve or jelly bag, turn into pan, add the rest of the sugar, and the grated rind and strained juice of the lemons, and boil till it thickens. Stir frequently and remove scum. Pour into warm jars and cover.
