- 2 lbs hard green apples
- 2 lbs sugar
- 1 pt water
- 1 oz ginger essence
- Peel, core and slice apples, put in pan and cover with sugar, add water and leave to soak till next day. Drain off liquid and put in a pan and boil for 20 minutes, till it becomes thin syrup. Add sliced apples and ginger essence, boil all together quickly till apples become transparent. Stir frequently, taking care to leave slices intact. When the mixture is quite clear, remove the apples with a slice, place in a warm jar, pour syrup over. cover closely while hot.
