Potato Skin Pie Crust
This idea came to me because sitting before me was a pile of potato skins. I thought it a waste to just throw them away, so the thought of a pie crust for a quiche came to mind. When searching quickly online I could see that I wasn't the first to think of this, although I only found one recipe per say, and it was not used for a quiche, but rather, for a mashed potato pie with beets. Anyway, this is not a solid recipe, as I did not measure anything & only made it once thus far, but it is an idea to play around with and something I will continue to play around with as well. So here is my version using just peels.

  3. Flour
  4. Seasonings, like salt and pepper
  5. Small Egg (or even just use the egg yolk or just egg white)
  6. You may add some grated onion and garlic to this, etc.
  1. Wash your potatoes well and peel. Put those skins into a food processor. Let drain in the fridge overnight using a chiffon cloth or cheesecloth so the skins will be drained of its liquids and able to crisp up.
  2. Then mix with some melted butter (or perhaps, you may be able to cut the butter in or even leave it out altogether--I used melted), an egg, some seasonings of choice and flour. (Although I did the draining thing after I added the butter, egg, seasonings and some flour, I could see that draining the liquids first was probably a better way to go, although obviously not too necessary since my crust came out very very well, after all).
  3. The next day, I then buttered my pie pan and then pressed in the skin mixture and baked the crust until firm enough -- around 350 for just around 30 minutes. I then put in my veggies, my grated cheese, and my seasoned egg mixture and baked the quiche.
  4. Again, the entire thing came out excellent and I did not have to waste those healthy potato skins!
  1. Mess around with this using just grated peels, butter, etc. -- instead of using a food processor.
