Couscous Salad

  1. 1 Boullion cube to 1 cup couscous ( 1 Caldo de gallina en cubo)
  2. Couscous (1 cup couscous to 1 cup water)
  3. Fresh Basil leaves, chopped
  4. Chopped tomatoes, or cherry tomatoes cut in half if desired
  5. Finely chopped green bell pepper, or yellow bell pepper for a variety of color
  6. Finely chopped purple onion
  7. Salt
  8. Black Pepper
  9. Balsamic vinegar
  10. Avocado oil
  11. Shredded iceburg lettuce
  1. In a bowl, place couscous. Boil water with boullion cube(s)--dissolve cube(s)--and then pour over the couscous. Cover with plastic and let stand until water is absorbed. Fluff. Toss in all ingredients except dressing and lettuce. Shake oil and vinegar together, pour on and mix well into the salad. Scoop salad over shredded lettuce.
  1. Top with a grilled chicken filet for some protein.
