  1. About 2 tbs or so coconut oil
  2. 1 red aji pepper, chopped
  3. 3/4 cup chopped green onions
  4. 4 garlic cloves, minced
  5. 1 teaspoon each of the following: ground cayenne pepper, ground cumin, ground ginger, ground coriander, black pepper, salt (sal en grano or sea salt)
  6. 2 lbs cubed tender beef like lomo fino
  7. 1/2 cup peanut butter
  8. 1 lb cubed fresh zapallo
  9. 2 lbs cubed potatoes
  10. About 4 cups full fat coconut milk, enough to cover
  1. Heat the oil in a soup pot and throw in the aji and onion and cook for one minute. Throw in the spices, garlic & salt and cook for about one minute more. Throw in the beef. Stir all together and brown the meat. Blend in the peanut butter. Then stir in the zapallo and potatoes. Add coconut milk, cover and simmer on low for a couple of hours, stirring occasionally. Taste and adjust salt or seasonings to taste, if needed. This stew will become very thick. As most things, tastes better the next day.
