Grains- Pseudo

I love the pseudo grains — quinoa and amaranth (both found here), especially quinoa. And here in Ecuador we pay only $1.00 per pound, sometimes a little more, for the quinoa at the mercados or at Ibarra’s farmer’s market. Anyway, it is plentiful.

It is high in protein, lacks gluten, and is tolerant of dry soil.
