Sweet Baked Plantains
I had to come up with something for dessert for a visiting vegan friend that was also quick and easy to prepare. My husband and our friend raved. So here is my post.
- Peeled ripe plantains
- coconut oil
- If desired, you can sweeten it up with brown sugar
- If desired, you can use butter instead of coconuts oil
- Heat oven to about 400 (200c). Place plantains in an appropriate size glass pan according to the number of ripe plantains you are baking. Dollop coconut oil over the plantains, sprinkle with nutmeg and cinnamon according to taste and scatter walnuts on top. (I like mine baked with the plantains, or you can place the nuts on top later.) Bake until the plantains are nice and soft, caramelized. Now and then open the oven and spoon the liquid over, basting the fruit. When soft, cut the plantains up or serve whole and divide out the liquid and nuts into individual servings.
- What you don't want are dried out plantains, so watch them and add more coconut oil if needed.
