Raspberry Marmalada Cheesecake with Honey
I created this recipe out of necessity, as my fridge needed emptying for a time, and the food items inside needed to be consumed. Either that, or be stored in a friend's refrigerator. Thankfully, my fridge was pretty bare.
After my husband said, that this recipe was worth repeating, and, how much our bricklayer enjoyed it, I decided to put it in my collection, and glad I had sense enough to take pictures. Sweetened with just a little honey and raspberry marmalada that I just happened to find in Ibarra. Top with some natural mora syrup from Ibarra, if desired.
- 500 g cream cheese, softened
- 3 eggs
- 1/4 cup honey
- 1 teaspoon vanilla extract or vanilla essence
- 1/2 cup raspberry marmalada -- if you can find, (or mora marmalada)
- Beat cream cheese, eggs, honey and extract together. Then fold in the marmalada. Butter a round glass pan. Bake in a 350 oven for 50 minutes, or until done.
