2 Ingredient Wild Blueberry Preserves
Here in Ecuador we only see the small wild blueberries. Using just wild blueberries and honey, these preserves are thick and delicious. You would never guess that pectin was not one of the ingredients, nor any chia seeds for thickening, for that matter. In fact, I do the same with blackberries. And when I make a mango and hot red pepper sauce -- the long hot red peppers -- the only other ingredient is honey or sugar.

  1. 4 cups cleaned wild blueberries
  2. 3/4 cup honey
  1. Throw the wild blueberries whole into a medium size pot and add the honey. On low to medium heat cook down until thick and bubbly, stirring now and then. Turn off heat and cool completely. It will thicken up even more.
  2. Taste this as you go and add more honey if you prefer a sweeter product.
